1 package Manischewitz Yellow Cake Mix (about 2 cups)
2 cups corn meal
1/4 cup sugar
1 tsp kosher salt
2 eggs
1/2 cup oil
1 cup nondairy milk

Corn Muffins


1. Preheat oven to 450 degrees F.
2. In a large bowl, mix all ingredients well.
3. Pour into cupcake tins. Be sure to fill only halfway. Alternatively, you can pour into a greased
8″ x 8″ cake pan for corn bread squares.
4. Bake for 15-20 minutes.
5. Cool and serve. These are best served warm with butter or margarine.
