This is my take on an Asian chow fun. Typically made with rice noodles, I used Manischewitz Extra Wide Whole Grain Noodles and it worked perfectly. You can use any of your favorite vegetables and/or add chicken, tofu or beef. I love the hearty wild mushrooms and could eat this as a vegetarian main or side dish.
