Tilapia Italiana

  • 2 lbs Tilapia filets (approx. 8-10)
  • 1/3 cup Manischewitz® Matzo Meal
  • 3/5 cup parmesan cheese
  • 2 5-6 ounce cans petite diced tomatoes
  • 5 tablespoons Extra Virgin Olive Oil


Preheat oven to 350 degrees. Line the bottom of a 9" x 13" glass pan (Pyrex) with 3 tablespoons olive oil and be sure to spread evenly. Place tilapia filets close together in pan to create a single layer. In a gallon-size plastic zipper bag, combine Manischewitz® Matzo Meal and parmesan cheese. Shake to mix thoroughly. Sprinkle matzo meal mix over tilapia until fish is completely covered. Drizzle 2 tablespoons olive oil evenly over matzo meal layer. Pour petite cut tomatoes over matzo meal mix and spread evenly, lightly smashing tomatoes. Be sure that all dry ingredients are covered by tomatoes and their juice. Bake at 350 degrees F for 35-40 minutes. Let cool for 1-2 minutes and cut into six even portions.
