Speckled Hummus

  • 1 packet from box of Hummus Mix
  • 1/2 cup water
  • 2 tablespoons reduced calorie mayonnaise
  • 1/4 cup artichoke hearts marinated,diced
  • 1/4 cup frozen chopped spinach, thawed, squeezed dry
  • 5 teaspoons grated parmesan cheese
  • 2 scallions, coarsely chopped
  • 1/8 teaspoons Louisiana hot sauce
  • 4 teaspoons diced pimiento
  • Water


Place chick pea dip mix, water, mayonnaise, artichokes, spinach, cheese, scallions and hot sauce in a food processor. Process until very smooth. Remove and place in a bowl. Finely dice the diced pimientos with a knife and stir into first mixture. Chill 15 minutes. Use as a spread on TamTam Crackers or as a vegetable dip.
