Peel and clean carrots, sweet potato, parsnips, turnip and garlic. The vegetable can be cut into pieces to cook faster. Place in large stockpot with enough water to cover the vegetables. Bring to a boil and then simmer vegetables until very soft, about 25 minutes. Remove vegetables and garlic from pot (The remaining liquid can be used as a vegetable stock for another time). Place vegetables and garlic in a large mixing bowl. Mash with a fork or potato masher, adding the matzo meal and egg. Stir in salt and pepper to taste. Heat oil in a large frying pan. Form patties of the mixture with hands and place in the hot oil. Brown on each side and drain on paper towels.
