Passover French Onion Tart

2 tablespoons olive oil
3 spanish onions
2 eggs
1 1/2cups Manischewitz® Matzo Farfel
1/2 pint cherry tomatoes
1 tablespoon chopped parsley
1 sprig fresh thyme
1/4 cup grated parmesan cheese


Preheat oven to 350 Degrees F. Heat oil in a large skillet and caramelize onions for at least 30 minutes until soft and golden. In a medium sized bowl, beat eggs and add matzo farfel, salt and pepper. Spread evenly in bottom of a greased 8" tart pan. Bake for 7-9 minutes, remove from oven and spread onions on top. Sprinkle with parmesan cheese. Cut tomatoes in half and make a circle of tomatoes around the tart. Bake 10 more minutes or until tomatoes are soft to the touch. Serve either hot or at room temperature.
