Ingredients

2 whole chickens cut into quarters
2 tablespoons oil
4 medium onions, sliced
4 cloves of garlic, finely chopped
1 inch piece ginger finely grated
1 teaspoon black pepper
1 teaspoon kosher salt
1 pinch saffron threads, crumbled
2 teaspoon turmeric
2 teaspoon cumin
2 teaspoon paprika
2 teaspoon nutmeg
2 teaspoon coriander
1 teaspoon cinnamon
1 cup dried prunes sliced
1 cup dried apricot sliced
1 cup cilantro or parsley finely chopped
1 cup Manischewitz chicken broth
¼ cup Manischewitz honey
1 cinnamon stick

Moroccan Chicken

Directions

Preheat oven to 375
Heat a large sauté pan on medium heat add the oil.
Once oil is hot sauté the onions, garlic and ginger till soft, and then add the spices.
Lower the heat and cook for additional 2 minutes.
Remove onions from pan and place in a large baking dish or 2 9×13 inch pans.
In the same pan, raise the heat back to high and sear the chicken for a few minutes on each side till brown on both sides.
Place chicken in the baking dish on top of onions and set aside.
In a small bowl mix the broth, honey, cilantro, cinnamon stick, prunes and apricots, and pour it over the chicken.
Cover the chicken tightly with foil and bake for 45 minutes.
Raise temperature to 400, uncover baste the chicken and bake for another 20 minutes to get golden brown.
