Fantastic Fish Cakes

1 1/2 pound Mahi Mahi or other firm white fish
1/2 onion, chopped
1 bell pepper, chopped
1 stalk of celery, chopped
4 tablespoons vegetable oil, divided
2 eggs, beaten
4 tablespoons Manischewitz® Matzo Meal
1 teaspoon garlic powder
Preheat oven to 425 degrees F. Season fish with salt, pepper and garlic powder. Bake 15 minutes until it flakes with a fork. Let cool. Meanwhile, saute onion, pepper and celery in 1 tablespoon of the oil. Combine flaked fish, vegetables, eggs and Matzo meal. Form approx. 3" patties and fry in 3 tablespoons of oil approx. 2 min. per side. May serve warm or room temperature with mayonnaise-based horseradish sauce. Enjoy!
