Dairy-Free Creamy Vanilla Frosting
Serves: Frosts: 1 (9 x 13 inch) cake
Cooking Time: 15 minutes
2 1/2 sticks Pareve margarine, at room temperature for 15 minutes
3 tablespoons vanilla flavored soy milk
1 teaspoon pure vanilla extract
2 1/4 cups confectioner’s sugar
In a large mixing bowl, combine the margarine, soy milk and vanilla. On low speed, gradually add the confectioner’s sugar. Turn the mixer to medium and beat until smooth and creamy.
