In a large bowl, combine Manischewitz® Matzo Meal, the poultry seasoning and salt and pepper to taste. Set this bowl aside. Clean chicken breast and pat dry. At the thickest part of the breast make a cut to create a pocket. In the pocket place 1/2 of a pablano chili pepper. Coat all of the stuffed chicken breasts with the Matzo Meal and place on a greased or foil coated cookie sheet. Place chicken breast in a preheated 350 degree F oven for 40 to 45 minutes or until they have reached 165 degrees F. Remove from oven and allow to cool for no more than 3 minutes. While the chicken is cooking, prepare the Manischewitz® Chicken Flavored Couscous according to the package. Once done cover and keep hot on the stove top until time to plate the meal. In a small bowl combine fresh diced mango and salsa. Keep cool or refrigerated until ready to plate the meal. Chop 1/2 of the cilantro finely, retain the remainder of the cilantro for garnish. In the center of a clean plate, place one rounded heaping spoon of the prepared couscous. This can also be done by placing the couscous in a container or custard dish to create a nice appearance. Place one chicken breast on top of or angled to the side of the couscous. Place 1 large tablespoon of the mango and salsa mixture across the chicken breast. Sprinkle the chopped cilantro around the plate and on top of the chicken and couscous and garnish with a few sprigs of the whole cilantro and serve.
