Matzo Brei

  • 4 Manischewitz® Matzos
  • 2 to 3 eggs
  • 2 cups of water
  • 1 cup of raisins
  • 1/2 cup of sugar
  • Cinnamon and vanilla (1/8 to a 1/4 cup)
  • Manischewitz® Cooking Spray


Fill a large bowl with lukewarm water.

Break matzos into bite-sized pieces and place into the bowl. When the matzo becomes soft, drain the water.

In a separate bowl, beat the eggs. Add softened matzo and mix gently.

Mix in raisins, sugar, cinnamon and vanilla.

Spray a frying pan or skillet with cooking spray. Pre-heat on low medium.

Pour matzo mixture into heated frying pan.

Cook for 5 to 7 minutes, then flip and cook other side for another 5 to 7 minutes.

When lightly browned, remove from pan and serve.

Serving Suggestion: Eat it plain or top with favorite jam, margarine, cream cheese or fresh berries! It is sweet and delicious either way.
