Equipment: 12" non-stick skillet, shallow bowls and mixing bowls, mallet for pounding, Food processor (optional for crushing peanuts), non-stick spatula, paper towels, and plastic wrap.
Rinse boneless chicken breasts, then pound flat and lightly dry with paper towels. Beat three eggs and 2 tablespoons water in a shallow bowl. Mix bread crumbs, matzo meal and honey roasted peanuts and place in shallow bowl or pan (Place peanuts in plastic bag and pound lightly with mallet until finely crushed). Dip boneless chicken breast in egg, then bread crumb mixture until thoroughly coated. Heat olive oil in skillet and cook breasts on each side until nicely browned. Lightly drizzle honey over chicken in skillet. Check for doneness with a fork (juices will run clear).
